Gavin Couper

Director of Food & Beverage

Gavin joins Adare Manor from One Aldwych London where he was Director of Food & Beverage, overseeing all dining outlets of the business including Eneko-Basque Kitchen & Bar, which he helped to launch in 2016 in partnership with 3-star Michelin chef Eneko Atxa. Gavin has also worked across a number of international locations as part of the leadership team at the Dorchester Collection.

Thomas Russell

Head Concierge

Thomas has a distinguished career in hospitality spanning seven years. Appointed in the Merrion Hotel in Dublin prior to joining the team at Adare Manor, Thomas has established himself as Head Concierge, and has since gone on received the globally recognised accreditation, Les Clefs d’Or or ‘The Golden Keys’: a symbol uniting concierges of the most esteemed caliber around the world. Successful recipients are recognised for their commitment and professionalism as they aim to cater for every guest request.

Loughlin Druhan

Director of Culinary

With a distinguished professional career spanning four continents, Chef Loughlin Druhan has been appointed to head Adare Manor’s team of over 100 culinary and stewarding professionals. His most recent posts include Director of Food & Beverage, Jumeirah at Etihad Tower; Executive Chef at the Ritz-Carlton Dubai, Cairo and Bahrain, He has also worked in a number of Michelin-starred restaurants including the K Club in Ireland and La Rochelle restaurant in France.

James Dempsey

Director of Facilities

James worked in Facilities Management at Analog Devices, Trinity College and Cook Medical prior to taking the role of Director of Facilities in Adare Manor. Along with holding a Batchelors of Science degree from University College Dublin and Electrical Engineering qualifications from Cork Institute of Technology and University of Limerick, James also carried out voluntary humanitarian engineering works during annual leave in the early 2000’s following the Balkans war.
