Sandra Flavin is your dedicated, highly skilled Wedding and Events Manager, standing by with everything you need to realise your wedding day vision. Since joining Adare Manor in June 2014, she has been the guiding light and capable hands behind countless beautiful events. With over 8 years experience in the wedding industry, including an international stint in The Radisson SAS in Brussels. Sandra has a wealth of knowledge to share, and an intuitive understanding of the behind-the-scenes magic which makes a wedding flow effortlessly and joyfully. David McKane

Banqueting Chef de Cuisine

David McKane is the talented culinary mind behind your wedding-day menu. He and his team will help you choose a magnificent selection of mouth-watering dishes to feast your wedding guests. You will meet with David and the culinary team at your complimentary menu tasting. Before joining the Adare Manor Team, David worked as Sous Chef alongside our Oak Room Head Chef Michael Tweedie at the award-winning five star Ballyfin Demesne Hotel in Co. Laois. Earlier, he was Sous Chef at the Lyrath Estate Hotel, Kilkenny, where he oversaw the menu development and daily operation of their fine dining restaurant.

Brian Lawlor

Food and Beverage Manager

As Food and Beverage Manager for Adare Manor, Brian Lawlor brings many years of experience to his role. From the very beginning, Brian’s passion for hospitality, fine food and world-class beverage has made him stand out from the crowd: he began his career having won the IHF Graduate of the Year award after graduation from the Waterford IT Hotel Management programme. His story with Adare Manor commenced in 1999, and ever since he has been a vital part of the team, acting in many roles, including Bars Manager, where his profound interest in mixology and creative cocktails and his in-depth knowledge of wines were incredible assets. Brian oversaw the initial opening of The Carriage House, later assuming the role of Carriage House Operations Manager before taking on the role of Food and Beverage Manager in the Manor House.
During his time here at Adare Manor, Brian has been central to the setup and execution of many events ranging from private dinners to large marquee evenings. From intimate weddings to complex business events, his experienced touch ensures a seamless event every time.
